Zucchini Noodles with Grilled Wild-caught Salmon/Organic Tofu
- Using a spiralizer or julienne peeler, create noodles out of the zucchinis and set them aside in a large mixing bowl.
- In the same bowl, add olive oil, oregano, garlic powder, salt and pepper, mix well to combine.
- Preheat the grill or grill pan to medium-high heat.
- Season the salmon or tofu with salt, pepper, garlic, cayenne, and smoked paprika on both sides.
- Grill the salmon or tofu for 4-5 minutes per side, or until it is cooked through.
- Add the zucchini noodles to the grill or grill pan and cook them for 2-3 minutes, or until they are slightly wilted.
- To serve, divide the zucchini noodles among plates and top with the grilled salmon or tofu.
- Serve the Zucchini Noodles with Grilled Wild-caught Salmon/Organic Tofu immediately with lemon wedges, if desired.
